If the dough is sticky when you are rolling it in your hands, add a little additional flour.Sift in the flour and add the milk, mix to a dough and then knead briefly. Don't overwork the dough or use an electric mixer for this recipe, the faster you mix the dough and the colder the butter and milk stay, the better your result. Beat the butter with the icing sugar, a pinch of salt and the lemon zest until a smooth.For the lightest biscuits, keep the butter and milk as cold as possible.Grate frozen butter into flour mixture using the large holes of a box grater stir until well coated. Drop by large spoonfuls onto well heated pan and spoon a bit of hot oil over each one. Pour buttermilk in and stir until wet add a little more milk if needed. Whisk together buttermilk and mustard in a small bowl. Pour a thin layer of oil to cover the bottom of a large baking pan and place in oven to heat. I rarely take the extra time to do this because they taste the same and it keeps my kitchen cleaner!
